This gluten-free vanilla cake mix is a great base if you want to get creative with flavours. Add any flavour extract, spices, coconut or fruit, if you like! Of course, it's a great staple too, as plain vanilla cake or sponge. Lovely topped with custard or berries, or just frosted old-school!

Batter refrigerates nicely for up to five days, and leftover cake freezes well.
