
This gluten-free vanilla cake mix is a great base if you want to get creative with flavours. Add any flavour extract, spices, nuts or fruit you like. Of course, it's a great staple too, as plain vanilla cake or sponge. Lovely topped with custard or berries, or just frosted old-school!
At Zena's we add quinoa flakes and coconut for a freedom coffee cake... a big hit with our vegan friends!
One bag makes 18 cupcakes, 2 - 8" round cakes or a 9" x 13" cake.
Batter refrigerates nicely for up to five days, and leftover cake freezes well.
